Bison Steaks are naturally leaner and healthier than Beef Steaks and will require a hot sear with a shorter cooking time over a long even cook on Medium heat like Beef steaks. Bison Steaks are amazing and render a beautiful finish if you follow these tips:  

For Bison Ribeye, New York Strip & Tenderloin Steaks

Fire up the pan or grill to a blazing 650F degree temperature for the best sear. Make sure you sear your steak at no less than 500F degrees.

Searing the outside of your Bison steak at a high heat allows the steak to get a fast cook on the exterior without compromising the flavor and tenderness on the inside of your steak, giving you a beautiful crust and a tender juicy steak.

Other tips for a perfect steak: 

• If you’re grilling your steak, start with clean grill grates coated with oil.

• A cast iron skillet will give you a beautifully crusted steak on the stovetop but any heavy pan will work. 

• Bison steaks can be cooked on the smoker for a full-flavored and tender finish.

• Let your steaks rest at room temperature for a minimum of 30 minutes prior to cooking.  Your steak can rest for up to 2 hours at room temperature.

• Rinse and pat your Bison Steak dry on both sides with a paper towel before seasoning.

• Toss a drizzle of olive oil on your Bison Steak and season with salt, pepper, and garlic. A simple season is all you really need. 

• Searing your steak in butter and basting as it sears will help to hold in natural juices.  

• Bison Steaks are naturally lean, so keep your steak at no more than Medium doneness              (145F degrees) internal temperature.  

• Medium doneness will give you a Bison Steak that is tender and full of flavor. We do not recommend cooking Bison Steak past medium.

• Let your steak rest for 5 minutes covered or 10 minutes uncovered after cooking, this gives a wonderful finish to your steak. 

• Always cut your steak against the grain.

Family Pride Steaks are cut to package weight not cut to thickness. So, how do you cook your Bison Steak to the desired doneness? 

Here are some guidelines to help you:

• Thickness determines cooking time. The thickness of your Bison Steak will determine how long you want to cook it. The weight of your steaks can be relative to steak thickness. 

The Internal Temp Guide below can help you decide how long to cook your steak to reach your desired doneness.

• Flip with tongs. Make sure you flip your steak with cooking tongs after searing the first side and sear the second side until your steak reaches the target time and internal temperature to achieve the doneness you want. 

Turning your steaks by sticking with a fork will cause your steak to loose flavorful juices that you want to retain for a tender juicy steak.
