Goulash Soup (Low Carb)

Ingredients

  • 2 lbs ground buffalo
  • 3 tsp minced garlic
  • 1 large yellow onion
  • 2 cups beef broth
  • 1 cup water
  • 1/3 cup olive oil
  • 1 quart tomato juice
  • 2 15 oz cans tomato sauce
  • 2 15 oz cans diced tomatoes
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp dried basil
  • ¼ tsp dried rosemary
  • ¼ tsp dried sage
  • 1 tbsp adobo seasoning
  • 3 bay leaves
  • ½ tsp salt
  • 1 tsp pepper
  • 1 ½ cups shredded cabbage
  • 1 cup shredded cheddar cheese
  • 1 bag frozen corn (optional)

Instructions

  1. In a large pan, saute ground buffalo in skillet over medium high heat until about half cooked.
  2. Add garlic, onions, olive oil.
  3. Add water and broth, tomato sauce, tomato juice, diced tomatoes, Italian seasoning, bay leaves, seasoned salt, pepper, salt, corn, and adobo seasoning. Mix well.
  4. Lower heat and cover. Allow to cook for about 20-30 minutes, stirring occasionally.
  5. Stir in the cabbage and let simmer for about 5 minutes (for more crunchy texture) to 10 minutes (for softer texture). The longer it simmers the more the cabbage takes on the flavor.
  6. Remove from heat and remove the bay leaves
  7. Stir in cheddar cheese and serve.
